WHERE ARE YOU FROM?

WHERE DO YOU/HAVE YOU WORKED?

I started off collecting glasses the day after my 18th birthday many moons ago in an amazing little bar called Bar Vinyl in Camden. Since then I've worked all over London including The Electric, Cobden Club, Proud Camden (The old one when it was cool), Cocoon and Monkey Chews. I've also done a shift behind The Queen Vic on Eastenders! I now I run Organic Spirit which is the UK's only events company to offer organic cocktails as well as our nautical supper club HMS Plate and Shaker. It's great fun having the freedom to be creative create and work with some really great people at the same time.

FAVORITE BARS?

Really depends on my mood... I have a great local in Stoke Newington for ales called the Jolly Butcher, for my rum it has to be Trailer Happiness and I love the creativity from the guys down at Through The Looking Glass they are doing some great stuff at the moment.

FAVOURITE DRINK?

This is always a tricky one for me to answer but I have to say rum, the diversity is huge and there really isn't a better tipple, a mood for every rum and a rum for every mood.

Bad ass barman/rock n roll moment?

Crowd surfing after taking first place at the Jameson's World final was one top remember...

Ever done it on a bar?

How very dare you!...but hasn't every bartender?

What's next for you?

Pushing ahead with lots of exciting new projects in the new year; we are relocating to Kent where I will be growing much of my own produce so looking forward to using home grown ingredients more and more in my drinks.

Best/worst chat up lines you've heard at a bar?

Best: "Would it be forward of me to kiss you?" Worst "Is it hot in here, or is it just you?"

I'm not wearing any pants

If you were to make a barchick cocktail, what would you put in it?

All BarChicks like a bubble bath right? So it would have to be my Bubble Bath Sour with Hayman's Old Tom, lavender and white chocolate syrups, lemon juice and egg white. Shaken to a lather and served straight up in a coupe.

How do you like your Martini?

Vestal Podlasie 2010, dash of dill pickle brine.

What did you want to be as a kid?

Not sure that I've really grown out of being a kid quite yet...DINOSAUR.
