WHERE ARE YOU FROM?

I tell people Melbourne in Australia though the truth is a very backwards farming town in the country, an attempt not to portray stereotypes I guess.

WHERE DO YOU/HAVE YOU WORKED?

I was at Bramble, Edinburgh before Co Founding with Mr Lyan.

FAVORITE BARS?

I have to say the Aussie power players that are Black Pearl and Eau de Vie, believe the hype I say! But I think bartenders make a bar, that'll always be the telling tale for return patronage and where I like.

FAVOURITE DRINK?

This week, French 75. Last week, Scofflaw with this tasty peach vermouth we started stocking. Next week it'll probably be a piña colada. Too many tasty drinks to have just one I reckon. Shots would be the most consistent drink I'd say.

Bad ass barman/rock n roll moment?

Hmmm, bad ass doesn't really fit me I think. Rest assured sabering champagne off a mansion balcony over looking Sydney Harbor Bridge to NYE fireworks feels pretty bad ass I guess?

On a bar? No...

What's next for you?

Plenty more bartending at Bramble. Stepping up in a bar with 6 years of a great achievement already under its belt involves a lot, trying to achieve greater things will require even more.

Best/worst chat up lines you've heard at a bar?

There is such a thing as a good chat up line?

My first drink of choice when I turned 18 was Midori... Shameful I know.  

If you were to make a barchick cocktail, what would you put in it?

Hmm how about 'The Boozy Chiquita' with Tapatio Blanco, Cynar, Violette and Peychauds (50/15/5/4dash) stirred down and served up. Bitter sweet and boozy to boot!

How do you like your Martini?

Wet and orange bitters with a twist. How it was and should be.

What did you want to be as a kid?

A jockey. Given I wasn't exactly a tiny kid my family found this hilarious and frequently remind me of this.
