WHERE ARE YOU FROM?

WHERE DO YOU/HAVE YOU WORKED?

I'm currently Bar Manager at Guy Cowan's quietly famous Guy's Restaurant & Bar, the open heart of the Merchant City's cocktail scene.  As far as the past goes, you could say I've been slinging drinks all across my city & beyond since a simpler time... from deepest darkest Ayrshire to the Costa del Sol.

FAVORITE BARS?

The Hemingway Bar in the Paris Ritz is where I truly fell in love with high cocktail culture.  I also love Tales & Spirits in Amsterdam.

FAVOURITE DRINK?

A pint of Guinness, with a wee malt whisky grumbling away by its side.

Bad ass barman/rock n roll moment?

My 20s were one big tissue of loosely connected rock'n'roll moments.  I'm semi-retired now, on the advice of, well... everyone.  Pipe & slippers time, I'm afraid.

Ever done it on a bar?

Sadly, no.  A skip, yes.

What's next for you?

Just keeping on mixing & falling & dreaming over all the bus stops & drunken underpasses, getting closer.

Best/worst chat up lines you've heard at a bar?

Best: 'Want yir hole?' Worst: 'What's your favourite piece of cutlery?'

No.  You're getting nothing from me.  I'd have to kill you.

If you were to make a barchick cocktail, what would you put in it?

My signature drink is the Dirty Prince Charlie - Auchentoshan Classic, Drambuie, pressed apple, fresh cherries, ginger & vanilla bitters.

How do you like your Martini?

Dry as a bone.

What did you want to be as a kid?

Indiana Jones.
