Locally, The Everleigh (Melbourne), The Corner House (Sydney). Globally, anywhere without pretension.

Red Burgundy and Malt Scotch (in separate glasses, thanks)

Bad ass barman/rock n roll moment?

Wow! The best 'family-friendly' moment would have to be sharing a cigar with Leonardo DiCaprio.

Ever done it on a bar?

I can't answer this. My girlfriend would kill me if I talked about all the times I've been laid in my previous bars....

What's next for you?

My bar, Bulletin Place, is newly opened. I'm really just hoping we fall into a rhythm quickly. That and plenty of travel for World Class in 2013.

Best/worst chat up lines you've heard at a bar?

I know a guy (me) who had business cards made up with "SEE..." written on them. the idea is to introduce yourself to a girl, ask them what they do for a living? After they tell you, then ask you what you do, you tell them you are a business card maker. Then you hand them the card. It can either be the best or the worst way to  break the ice with a girl.

Tell us a secret or something we don't know?

Here's a few. I love cooking more than bartending, I ran a sub four hour marathon in France, I collect Coca Cola cans from around the world, my mum is a lesbian, and there is nothing funnier than monkeys wearing human clothes.

If you were to make a barchick cocktail, what would you put in it?

"On Point cocktail" Tanqueray (British) Lemon Juice (Tart) Dehydrated pineapple jerky (Dry and Sweet), Grapefruit Juice (bitter) Black Pepper (Spicy)

How do you like your Martini?

2:1 with orange bitters. No garnish

What did you want to be as a kid?

Radio host
