Paris - PasDeLoup Start off in the Scandi slick kitchen for some tasty small plates, before heading into the sultry cocktail bar in the back, where Candelaria’s brilliant Amanda Boucher is at the helm with some lovely and original creations. Follow the flavour map to find your perfect drink, or go for one of the clever cocktail and food pairings. 108 rue Amelot pasdeloup Paris – CopperBay An alternative to the speakeasy, the trio of owners, Elfi Fabritius, Aurélie Panhelleux and Julien Lopez, wanted to create a bright and airy space - a neighbourhood hangout for any time, which is exactly what they’ve done. It looks beautiful and the drinks are spot on, made at an open bar, as if you’re drinking in a friend’s kitchen. 5 Rue Bouchardon Moscow - Moskovsky Bar at the Four Seasons The hotel is already taking reservations for its October 30th opening, but you’ll have to wait until then to visit the bar. With views of the Kremlin and Red Square, expect a crudo bar, cocktails and, of course, Champagne. 2, Okhotny Ryad Str., Moscow, 109012 moskovsky Amsterdam – Waterkant This waterfront bar under the Q-park in Amsterdam West is keeping things tropical throughout winter with palm trees, rum from coconuts and Surinamese food (nope us neither, it’s in South America). Marnixstraat 246, 1016 TL London – Dandelyan The second bar from cocktail genius Ryan Chetiyawardana is in the very new and very slick Mondrian Hotel on the Southbank. Singapore – FOC With Michelin-starred chef Nandu Jubany at the helm, you know the tapas is going to be out of this world at this highly-anticipated Spanish outpost, but we’re just as excited by Spanish Dario Knox’s creations behind the bar. 40 Hongkong Street, Singapore 059679 Sydney – The Champagne Room at the Winery Opening on the upper floor of this Surrey Hills hotspot will be a luxury Champagne bar. Think Perrier-Jouët’s Belle Époque 2006 by the flute, city skyline views and even a Champagne bell, which lights up the waiter station whenever you need a top up. 285A Crown St, Surry Hills winery Sydney – The Whisky Room The Clock Hotel has jumped on the whisky bandwagon in Surry Hills, and opened a single malt room out the back. It feels like an old world saloon with lots of wood, high stools and swinging doors, not to mention over 100 whiskies on offer, with whisky flights and food pairings, as well as whisky-based cocktails from bar manager Daniel Molnar. New York – Aldo Sohm Wine Bar La Bernardin’s famous wine master Aldo Sohm has branched out and opened this more casual wine bar down the street. Hang out at the tasting table for a three-glass flight, or get comfy on the oversized couches with a bottle from the 200-strong list and some charcuterie and cheese from La Bernardin. 151 W 51st St aldo New York – Boilermaker What was the Golden Cadillac has swapped 70s retro for craft beer, cocktails on tap, and, of course, beer and shot pairings. Boilermaker has many of the same team behind it (Greg Boehm, Don Lee, and Miguel Trinidad) but a completely different vibe - this is an awesome neighbourhood joint. 13 First Avenue New York – Birds and Bubbles This Southern style lounge does what it says on the tin: Champagne and fried chicken, from City Grit’s Sarah Simmons. 100B Forsyth St birdbubbles New York – Bar Hugo This stylish rooftop lounge on top of the Hugo Hotel gives mega panoramic views – you can see pretty much everything. Add cocktails from Ben Scorah of Bill’s Food & Drink, and Italian small plates from Carlo Bigi, and we’re won over. A second open air floor to open next summer. 525 Greenwich Street Toronto – Nuit Social This West Queen West restaurant-bar is perfect for grazing your way through some sharing boards of cured meats and cheese, bite size nibbles and a glass of wine at the colourful stained-glass bar. The cocktails are good too, but come in a bit pricey. 1168 Queen St W nuitsocial Toronto – Duggan’s Brewery Home to the award-winning No. 9 IPA, they’re opening a new brewpub in Parkdale, with snacks to see you through the many, many beers. 1346 Queen St West
