Unless you’ve been living under a rock for the past 5 years, you know that cocktail master Tony C can make a mean drink. Not content to just leave it at that, he has gone back into their lab to develop a menu of small bites that - just like his drinks - are one part classic, one part imagination, but mostly just totally awesome all over.
Their menu is light and fresh; The Melon++ is ribbons of melon that have been infused with ginger, mint, and ham stock through a process of vacuum pressing. The “Prairie Oyster,” which looks just like a raw egg yolk, is actually clarified tomato juice with horseradish. If you’re craving a bit of meat in your mouth, get involved with their Beef Sandwich, which is inside out with crunchy pumpernickel bread and micro herbs.
Not wanting to limit your drinking options, they wisely made sure these little bites of yum wont compromise your taste buds, so feel free to tuck into any and all while you imbibe the concoctions that put this classic hole in the wall on the map. Tony C we salute you.
