Drinking here is like taking your five senses through some kinda flavour fun house. It’s not just mixology, this is molecular sh*t. They’ve been studying at the gastronomic shrine of elBulli and have come up with cocktails so complex they probably require a degree to concoct. They have a centrifuge – need we say more? But who cares when they take your mouth on a sensory tour de force.

The signature Earl Grey Caviar Martini combines Absolut Vodka with elderflower, apple, Cointreau, lemon and lime, with balls of earl grey infused jelly 'caviar', topped with a mountain of whisked up foam. It’s quite a sight and we won’t even get started on the taste.

The bar is dimly lit, long and thin, with leather sofas lining the walls and small metal tables and stools squeezed in wherever else there is space. It’s sleek and a little industrial.

The bar snacks are tasty and the barmen total pros: very attentive and evidently taking huge pride in what they do. And so they should, this is a must stop in HK's cocktail scene.

It’s packed from 7pm onwards, mainly with media types and fashionistas, so make a reservation to be sure.
