Squirrel, mallard, hare… no, not a budget Wind in the Willows reboot. These are all animals that appear on your plate at Sussex. Those cheeky Gladwin brothers (Rabbit, The Shed and Nutbourne) have brought their rural farm to Soho. And just like a farmer in a potato patch, we’re digging it.

Prop yourself at the bar, it’s the best place to watch those mixology maestros whip up the Sussex Signatures. These reinvented cocktails will change how you look at the classics. License To Thrill is their banging twist on a Martini -  spoiler alert, it includes seaweed dust for an umami kick. BarChick’s also gone crazy for the snacks. Three words for you: Mushroom Marmite Eclair. You’ll never look back. The rest of the menu is seriously inventive, but not in a mad scientist kinda way. More a curiously creative look at homegrown produce, given a modern twist. Order the Hare Wellington for two of you, it’s a showstopper. And yes, BarChick tried squirrel in her tortellini. You'd be nuts not to give it a go.
