The latest venture from heavyweight Argentine mixologist Diego Cabrera and his team, we were all ears before he even started making a drink. Located in the multi-million pound high tech NH Hotel Eurobuilding (it does things we don’t even understand), the DOMO Lounge & Terrace sits alongside Madrid’s only three Michelin-starred restaurant, so you’re basically sitting pretty.
The team are decked out in head to toe El Ganso (think checked trousers, bow ties and braces), mixing delicious, beautifully crafted and reassuringly potent cocktails. Relax on a velvet sofa, and wait for your drink to arrive. Whisky and tequila feature large on the 12-Euro cocktail menu, with chipotle, chilli and cardamom adding an additional kick to keep things lively. Tequila, Pimm’s and pisco-infused Steam Drunk is our cocktail of choice at the moment, and we were back the next morning for a long Bloody Mary, made with a mix of home grown organic veg. Almost righteous.
