Unleash your inner bourgeois artiste and drink yourself silly with absinthe in this seriously Parisian coffee house. Located in the hip Surry Hills, make like a scene from a Toulouse Lautrec painting, mademoiselle.

Ask nicely and you might get served their own home blend of cognac and absinthe, which is reportedly what Lautrec himself used to carry in the hollow of his cane, what a guy.

You won't find any food or fancy cocktails here, just absinthe drunk the way it should be, with a little ‘how to’ guide delivered verbally by your host for those new to the game. Naturally the green stuff comes with a weather warning (and a three drink maximum, boohoo) so shenanigans are seemingly few considering the young crowd.

If that ain't enough for you, buy up big on all things absinthe in the shop out front and sign up to their Absinthe Appreciation Society. There's no standing room here so make sure you book ahead.
