WHERE ARE YOU FROM?

I was born in Glasgow but grew up in Greece.

WHERE DO YOU/HAVE YOU WORKED?

After working a bunch of agencies and nightclubs as a student, I worked at the Opal Lounge in Edinburgh. I moved to London to work for Match Group - bars including Trailer Happiness, The Player and Milk & Honey. I went on to Manage the Crazy Bear in Fitzrovia and since 2009 I have worked for B&H Group - with a small stint doing consultancy for Strangehill in between, before moving to Dare Hospitality.

FAVORITE BARS?

China Tang, Happiness Forgets & Satan's Whiskers.

FAVOURITE DRINK?

A strong espresso in the morning. Bourbon & ginger beer or a Daiquiri for boozing. But I reckon I would struggle most without Coca Cola.

Bad ass barman/rock n roll moment?

Breaking a record Friday night missing my bartender - with only a barback for backup. The till system was down and at the end of the night a bunch of customers went around the bar and collected a glass-full of tips for us! Bloody gratifying.

Ever done it on a bar?

No, but not for lack of trying...

What's next for you?

Another venue with B&H Group - our biggest yet with a great aesthetic and brilliant food & drink offering - soon to be announced!

Best/worst chat up lines you've heard at a bar?

I don't know if the ones I remember can even be repeated - they have come from bartenders and they certainly don't do our industry any favours!

Tell us a secret or something we don't know?

I've effectively been doing this work for a quarter of a century now! And I'm only 33! I am a twin, which generally scares most people when they find out.

If you were to make a barchick cocktail, what would you put in it?

Whatever you asked me to - we'd figure it out together after a quick Q&A.

How do you like your Martini?

Gin - wet - lemon twist, very cold and with a couple of good olives on the side to nibble on!

What did you want to be as a kid?

I actually grey up in a restaurant and what I mostly wanted was to never work in the service industry ever again - how times change!!!
