WHERE ARE YOU FROM?

Melbourne, Australia

WHERE DO YOU/HAVE YOU WORKED?

I worked on Hayman Island (Whitsunday Islands, Queensland) for two years. After meeting many Canadians there, I came to Canada for the Winter Olympics and worked in various bars around Whistler as well as the Hilton Hotel. I landed a job at the Fairmont Pacific Rim in Vancouver and five years on I’m still here.

FAVORITE BARS?

Locally I like the Keefer Bar and the Hawksworth in Vancouver and internationally, La Candelaria in Paris.

FAVOURITE DRINK?

My favourite drink is actually a gin Martini, but I also like Margaritas and Daiquiris, especially when travelling.

Bad ass barman/rock n roll moment?

Coming fourth in the global finals of the Diageo World Class cocktail competition 2014. Eighty people changed their Facebook profile picture to mine for support which was an awesome feeling.

Ever done it on a bar?

What happens at the bar stays at the bar.

What's next for you?

I don’t really have a plan; I like to keep things a little spontaneous. In the next few months I’ll be assisting with judging for this years’ Diageo World Class competition and coaching the Canadian finalist.

Best/worst chat up lines you've heard at a bar?

I once heard a guy tell a girl that he was a professional arse model. Didn’t work too well for him.

Tell us a secret or something we don't know?

I’ve been bitten by a shark; a small one bit me while I was scuba diving on the Great Barrier Reef.

If you were to make a barchick cocktail, what would you put in it?

Probably something similar to a competition drink I made that’s locally inspired with Victoria Gin, Pineau des Charentes, a Champagne reduction and Bittered Sling Orange & Juniper Bitters.

How do you like your Martini?

With Tanqueray Ten gin, wet with a dash of orange bitters and a lemon twist.

What did you want to be as a kid?

A travel host, I wanted to show people the world.
