Located on an unassuming street in Historic Filipinotown, look out for the cocktail signboard and head into a room that’s the epitome of Roaring '20s glam: a chandelier that drips with sparkle, an ornate bronze-tiled ceiling reflected back in mirrored tables, luxe art deco motifs on the shimmering wall and the kind of lighting that could make anyone look good on less than three hours of sleep.

Then there are the drinks. Each is crafted with inspiration from the local area as well as throwbacks to classic cocktail allure. The Infinity Pool is poured at the table so it reaches right to the brim of your glass (and is kept in the freezer so it maintains perfect Martini viscosity), while the Sea Cup mixes genever, cucumber, pink peppercorn and fennel salt in a fresh, herbaceous and nuanced serve. In the mood for something savoury? The Datu Datu is a Dirty Gin Martini-Gibson hybrid with the Filipino flavours of fish sauce and vinegar. Trust us, it works. Whether with mates or a date, don’t be afraid to ask for advice - the staff here are schooled and know their stuff. Genever is artistic, tasteful and sexy - give it up for the girls.
