WHERE ARE YOU FROM?

Birmingham originally, although I spent much more time in Bury St Edmunds.

WHERE DO YOU/HAVE YOU WORKED?

I've been at Dishoom for the past three years, and was lucky enough to have opened their 2011 pop-up on Southbank, Chowpatty Beach, as well as opening the Shoreditch branch. Before that I worked for Hilton Hotels and The Old School Yard.

FAVORITE BARS?

LCC - friendly faces, great banter and the classic serve of a pint of G&T served in tankard!

FAVOURITE DRINK?

Auchentoshan Triple Wood, taken whilst sitting on a Chesterfield (the chair is all-important!)

Bad ass barman/rock n roll moment?

Guest: Young man, please ensure that you chill that bottle of Drambuie; I will be drinking the entire bottle this evening. Me: I don't think you'll manage that Sir, but I'll put it in the fridge for you. Guest: I bet you £50 I can do it. Me: OK Sir. 4 hours later... guest not in the best shape Guest: See BOY?! I told you I would drink it. Me: Yes Sir, but that means you owe me £50 now. *Hands over money and leaves.*

Ever done it on a bar?

Yes... and you learn to respect the dangers of bottles and speed pourers in the rail!

What's next for you?

The Owl & Pussy Cat... I've just finished stocktake; it's customary to head over there for beer!

Best/worst chat up lines you've heard at a bar?

Bar: How do you take your Martini? Guest: Filthy *wink*

Tell us a secret or something we don't know?

I once blew up my cooker and most of one wall of my flat attempting to distill my own vodka. Luckily I'd popped to the loo and so avoided it exploding in my face!

If you were to make a barchick cocktail, what would you put in it?

Well it would have to be something crazy for you, so... I'd probably go with a Paan Sour: 50ml Woodford 4 lime wedges 2 Demerara sugar cubes A pinch of Pratik Hira Moti paan mix - tastes like the scent of a temple and contains a fair whack of tobacco too!

How do you like your Martini?

With Old Tom and a perfect balance of Antica and Noilly.

What did you want to be as a kid?

A pro rugby player - I managed to play over in New Zealand a few years back.
