WHERE ARE YOU FROM?

South Africa originally but lived in New Zealand for long enough to call it home.

WHERE DO YOU/HAVE YOU WORKED?

I've worked in a few places in New Zealand, Melbourne, Sydney and most recently ECC in Chinatown. Now I've taken a position with Kamm & Sons

FAVORITE BARS?

Happiness Forgets in Hoxton Square, it's cosy and quaint, the team there are utterly sensational and all so dashing! Artesian at the Langham - it's won best bar for a reason, the guys are spectacular and so are their drinks Shady Pines in Sydney.

FAVOURITE DRINK?

Tough call, probably a Purgatory but I love Sazeracs and Daiquiris.

Bad ass barman/rock n roll moment?

Ask me tomorrow, I'll see what I can rustle up behind the bar tonight.

Ever done it on a bar?

Cousin it holds no appeal.

What's next for you?

To write something.

Best/worst chat up lines you've heard at a bar?

They're the same line: "I want to f*ck your face"  slipped into the middle of an order. I guess he gets points for creativity.

Tell us a secret or something we don't know?

Sometimes I'm scared of the dark.

If you were to make a barchick cocktail, what would you put in it?

I'd call it Ada-Girl , a julep style drink with Vietnamese mint, Blackstrap Rum, Mandragola and a smidgen of Demerara sugar. Maybe some bitters, cause bitters are bad ass. Named after Ada Coleman who was head bartender at the American Bar in the Savoy in the early 1920s.

How do you like your Martini?

Wet, with gin and all of the olives.

What did you want to be as a kid?

A fighter pilot.
