I love Milk & Honey; that's definitely my go-to place for a great drink and quality service. Merchant House is also great bar and has probably one of the most amazing back-bars that I've seen. Take me to a bar that has a great rum collection and I'm there.
'Old Fashioned' with Diplomatico Reserva Exclusiva. Like any bartender though, I do love my classic Daiquiri, huge fan of Plantation's Three Star.
