FAVORITE BARS?

I love Milk & Honey; that's definitely my go-to place for a great drink and quality service. Merchant House is also great bar and has probably one of the most amazing back-bars that I've seen. Take me to a bar that has a great rum collection and I'm there.

FAVOURITE DRINK?

'Old Fashioned' with Diplomatico Reserva Exclusiva. Like any bartender though, I do love my classic Daiquiri, huge fan of Plantation's Three Star.

Bad ass barman/rock n roll moment?

I couldn't say, every night I work is pretty rock n' roll.

Ever done it on a bar?

Sadly no, not yet.

What's next for you?

As a huge fan of dance music, I've launched my own record-label/management agency and I've got six fantastic producers already on-board with me, which is really exciting. Some other bits and bobs in the pipeline as well.

Best/worst chat up lines you've heard at a bar?

Oh there's too many! My favourite's always the drunken slur "Hi" and that tends to be me.

Well that would be telling.

If you were to make a barchick cocktail, what would you put in it?

Mai-Tai (how I like it) and I'd make two and join you. 40ml Appleton Estate 12 Year 5ml Smith & Cross 5ml Wray & Nephew 25ml Fresh Lime Juice 15ml Orange Curaçao 15ml Orgeat Syrup 10ml Sugar Syrup Shake it up.

Filthy.
