WHERE ARE YOU FROM?

I was born in Stornoway in the Western Isles of Scotland but I guess I’d identify as an Edinburgh kid.

WHERE DO YOU/HAVE YOU WORKED?

I started at a big ol’ chain pub while at university and followed that with stints at Le Monde and Sygn in Edinburgh, Grandma’s in Sydney and I’m currently behind the bar occasionally and a laptop more often at Bramble.

FAVORITE BARS?

I’m a big fan of what they do at White Lyan and some of my favourite nights ever in a bar happened in Black Pearl in Melbourne and Shady Pines in Sydney.

FAVOURITE DRINK?

If you go on what I actually drink the most, it’s probably a Boilermaker but I definitely have a soft spot for the Knickerbocker.

Bad ass barman/rock n roll moment?

Two drunks guys were asking for shots of Green Chartreuse and I was all “sorry fellas” so they asked what my favourite cocktail was. I said it was two parts oxygen to one part water and they ordered two of them.

Ever done it on a bar?

Chances are.

What's next for you?

I haven’t had much of a plan up to this point so I’m happy where I am for now. Sure beats having a real job.

Best/worst chat up lines you've heard at a bar?

My favourite – and it’s actually both – was someone asking the bartender “what time do you get off?” followed by “so that makes it quarter past for me right?”

If you were to make a barchick cocktail, what would you put in it?

I’d probably get you guys a Periodista; it’s one of those semi-forgotten daiquiri variants which doesn’t get anywhere near enough love. 45ml Bacardi 8y.o. 15ml Cointreau 15ml Merlet Apricot liqueur 20ml lime juice - Shake - Coupe/martini (up) - Lime wheel/twist to garnish

How do you like your Martini?

Outside of gin-y, I’m not fussy.

What did you want to be as a kid?

I feel like I should say fireman or astronaut, but I suspect I kind of always wanted to be a librarian.
