Favourite bars in Edinburgh are The Bon Vivant, Bramble. In NYC my Favourites are Little Branch & Wifle and Nell. In London, Nightjar is very cool and love the guys at 1806 in Melbourne

Short term is to work hard for the next few years and do some competitions to gain more experience. In a few years I would like to travel to Australia and maybe NYC. And maybe set up my own little bar in the future

My winning drink for Tapatio competition in Edinburgh last year is one I’m proud of. The Yaucatan Cocktail 45 ml Tapatio Reposado 15 ml Skillogalee Muscat Liqueur 1 Japanese barspoon of Maple syrup Stir over hand cracked ice, in a chilled mixing glass. Garnish- Chocolate truffles coated in Rock salt and fresh lime zest. Truffles were made by Bia bistrot in Edinburgh
