Where are you currently working?

I work for a company called Arc Inspirations who operate up North. I’m currently the Bar Manager of Banyan in Leeds but in the next couple of weeks I will be moving over to one of our other bars, Manahatta, as the General Manager.

Tell us something about the industry we might not know?

This is something that I learnt from customers. Less ice means more alcohol. And if the bartender puts too much in then the correct way to handle that is to scoop it out and throw it on the bar top.

What is your favourite cocktail?

Sidecar

Ever had a bad-ass/rock n roll bartending moment?

Having one of my drinks served at London Cocktail Week was pretty cool. Also being invited to 50 Best Bar awards this year and being in a room full of people I follow on Instagram. And of course having my drink named the Best Bloody Mary in the country.

Where will we find you on your nights off?

That depends on how far away payday is. I’ll either be found in one of Leeds’ many bars or at home with the dog.

If you weren’t tending bar, what would you be doing?

Well I have a degree in Biomedical Science with Human Biology (fancier than it sounds) so maybe I would be in a lab somewhere. However towards the end of my degree I fell in love with bartending and only just managed to finish it.

What is your desert island bottle?

Grey Goose VX

What is your hangover cure?

Original Lucozade. Everyone says that Orange is better but original cures all.

If you were going to create a cocktail for BarChick, what would you make?

I have done a lot of work with coffee cocktails so probably an espresso martini twist. Grey Goose, Homemade Coffee Liqueur, Amaro, Kenyan Espresso, Chocolate and Cardamom Bitters, Mulberry syrup.
